Hearty Beef Barley Soup - December 26, 2017

If it's cold outside, then you'll need a great soup recipe to warm you up after a day of play in the snow, whether you like to ski, go snowmobiling or hike in the snow. The best soups are made in one pot so you have less work to do when you get home. Better yet, use a crock pot and have it waiting for you when you get back.

Hearty Beef Barley Soup

  • 1 slice bacon, cut into thirds
  • 1 pound beef, cut into 1-inch pieces, any cut
  • 6 cups beef broth or 6 cups water and 6 beef bullion cubes
  • 1 cup pearled barley
  • 2 medium potatoes, cut into 1-inch pieces
  • 1 16-ounce bag mixed vegetables, frozen
  • Salt to taste
  • Pepper to taste
  • 1 tbs. Onion powder
  • 1 tbs. Garlic powder
  • 2 tsp. Badia Redfish seasoning
  • 5-6 drops liquid smoke
  • 5-6 drops Worcestershire sauce


Fry the bacon over medium high heat until it's translucent in a large pot or a crock pot. Add the beef. Stir the beef constantly until it is browned. Add the beef broth or water and bullion cubes. Add the pearled barley. Cover and let simmer for 1 hour. Add the potatoes and all of the spices. Cover and let simmer for 60 to 90 minutes or until the barley and potatoes are soft.

Taste the soup and adjust spices as needed. Add the mixed vegetables and simmer for another 5 to 10 minutes or until the vegetables are cooked through.

If you want to cook this all day, set the crock pot on medium high to cook the bacon (for the fat) and the beef. Then turn the crock pot down to medium low or low and add the rest of the ingredients. Cook on medium low or low until the potatoes and barley are soft. You may also choose to add the vegetables in the last 15 to 20 minutes if you prefer crunchier vegetables.
